Chef Matteo's dream comes true

In the heart of Valpolicella, among vineyards and green landscapes just few minutes from Verona, OSTERITA, chef Matteo Sivero’s new gastronomic project becomes real.

Opened in 2025, the restaurant was born as a tribute to Grandma Rita and the most authentic Italian cuisine: that poor, peasant and familiar one,  reinterpreted with contemporary sensibility and signature technique.

Housed in the historic building “La Cooperativa”, built in the ’50s and recently restored, Osterita combines memory and modernity in an elegant yet essential environment, where sustainability, conviviality and gastronomic research coexist in balance..

 

DIAMANTE, beating heart of OSTERITA

The selection of Diamante Olis equipment has been led in a targeted and in-depth way, through a joint work  among the technical and commercial team of Olis  personally with the chef, to ensure the best functionality of the kitchen spaces.

The project has been developed to meet the needs of a gastronomic proposal that combines tradition and modernity in its execution techniques.

The installed Olis gas cookers stand out for their high performance and reliability, thanks to double-crown stabilized flame burners, which ensure more efficient and uniform heat distribution. Grills with elongated spokes also allow for practical use of even small pots and pans, while the removable AISI 304 stainless steel lower basin ensures high standards of hygiene and ease of cleaning.

Completing the performances are the Super Griglia Olis, able to add the barbecue effect thanks to the smoker accessory, the classic Olis pasta cooker, and the BainMarie, a perfect element for keeping sauces at temperature to complete or garnish dishes or to regenerate. 

A modular solution, enclosed by distinctive hips that follow the diamond line; iconic aesthetics of the entire Diamante90, Diamante70 and Diamante Touch range. 

 A well-equipped and technically perfect space permits to the talent of a chef to be free to express itself.

Sivero’s cuisine focuses on the essence of taste and the valorization of the great symbols of Italian tradition, following the rhythm of the seasons and the connection with the Veronese area. A project that reflects the journey of the chef, who at just 19 years old became the youngest Michelin-starred chef in Italy and is now the protagonist of international collaborations and initiatives related to the promotion of Italian gastronomic culture.

According to initial online reviews, the Osterita experience is striking for its balance between refinement and hospitality, with dishes that reinterpret Italian gastronomic memory in a modern key.
